Carrot Salad

 1 lb Carrots
 1 pinch Fresh Parsley (chopped)
 2 tbsp Extra Virgin Olive Oil
 2 tbsp Freshly Squeezed Lemon Juice
 2 tsp Dijon Mustard
 ¼ tsp Salt

Grate carrots using standard box grater or purchase already shredded carrots. Combine in a large bowl with the chopped parsley.

In a small cup combine olive oil, lemon juice Dijon mustard, and salt. Whisk well to blend. Pour over the carrots and parsley and toss well to blend. Cover and refrigerate until ready to serve.
