Maple Roasted Sweet Potatoes

Sweet Potatoes
Yields12 Servings
 2.50 lbs sweet potatoes, peeled and cut into 1 ½”pieces, (about 8 cups)
  cup pure maple syrup
 2 tbsp butter, melted
 1 tbsp lemon juice
 ½ tsp salt
 fresh ground pepper to taste

Preheat oven to 400

Arrange sweet potatoes in an even layer in a 9x13 glass baking dish

Combine maple syrup, butter, lemon juice, salt and pepper and pour over potatoes, toss to coat

Cover and bake 15 minutes

Uncover, stir, and continue baking, stir every 15 minutes until potatoes are tender and starting to brown, an additional ~ 45-50 minutes

Note: can prepare in advance, cover, and refrigerate for up to 1 day. Just before serving, reheat at 350 for about 15 minutes.
